Weyer Family Pork and Sauerkraut

from Nheena Weyer Ittner

Place one pork loin in a large stock pot, cover with water, boil then simmer until fully cooked.

Cool pork completely in the broth.

Remove all solidified fat from the surface of the broth ...reserve liquid.

Remove pork from the broth and shred meat with a fork.

Open two large cans of sauerkraut and place in a deep casserole dish.

Add the shredded pork.

Pour reserved broth over the sauerkraut until covered.

Cook in 350 degree over for about one hour or until bubbling.

Serve over boiled potatoes or mashed potatoes.

"Not exactly gourmet but was so yummy! My sister used to sit under the table and smell perfume bottles while it cooked, hating the smell of sauerkraut."
