Finnish Pannukakku

"Here's the recipe that I grew up with. "Pannukakku" literally translates into "pancake" and this is a great breakfast meal, but when I was a kid, my mom would sometimes make it for dinner. Or, we enjoyed it after sauna on Saturday night. How Finnish is that, eh?"

4 eggs

2 cups milk

1 cup sugar

1 cup flour

2 tbsp butter

1 tbsp vanilla extract

Preheat oven to 350 degrees. Place butter in 8 1/2" x 11" metal baking pan. Place pan in oven to melt butter.

Mix eggs, milk, sugar, flour and vanilla extract together in large mixing bowl until smooth. Remove pan from oven and spread melted butter around in the bottom of the pan.

Pour egg mixture into hot pan and place in oven. Bake for 60-70 minutes until crust gets golden brown. Remove from oven and let cool for 10 minutes. Cut into squares and serve with berry jam, syrup, or sugar.

Serves 6-8.
